I hate yoai...but I suppose the pairing I like the most would be Grell and Sebastian. If Grell didn't like Sebastian there wouldn't be as many funny parts. xD And anways, Sebastian rejects him.

Technically, my favourite couple would be SebastianXCiel (what's new?). They are just too cute together.

But my favourite couple that could (more) realistically happen would be UndertakerXGrell. I know it's not in the manga. But I really do think that they are insanely compatible with each other.

Another possible couple that I like would be AgniXSoma, for the same reasons that roseversailles stated.

I'm also a fan of SebastianxCiel, its that whole forbidden relationship, between butler, and master that gets me going. Plus Sebastian is a demon, Ciel human, another taboo, I like.

UndertakerxCiel. Not really a common pairing, but I think it would be interesting.
LauxCiel. Another noncommon pairing I like.
UndertakerxGrell. This is just cute.

Hm... Yes, I think... SebastianxCiel. There's just something about that pairing that makes me smile. ^^ The ever loyal butler and the cold master. And the butler being ordered to do something.. .... err.... *starts to hide stuff* Nothing to see! Shoo!

Anyway, apart from that... Mh.... I find WilliamxGrell amusing, and UndertakerxGrell too. Then... I'm not sure.
